Can Coffee Reduce The Risk Of Diabetes?

Diabetes is a disease in which the body does not produce or properly use insulin. Insulin is a hormone that is needed to convert sugar, starches and other food into energy needed for daily life. The cause of diabetes continues to be a mystery, although both genetics and environmental factors such as obesity and lack of exercise appear to play roles.

Research suggests that people who drink coffee are less likely to get type 2 diabetes. It isn't known whether the caffeine or some other ingredient in coffee is responsible for its protective effects.

The researchers wanted to see whether there is a link between diabetes and drinking coffee and green, black, and oolong tea. Participants completed a detailed questionnaire about their health, lifestyle habits, and how much coffee and tea they drank. The questionnaire was repeated at the end of the 5-year follow-up period.

When other factors were accounted for, researchers found that the more green tea and coffee participants drank, the less likely they were to get diabetes. People who drank six cups or more of green tea or three or more cups of coffee each day were about one-third less likely to get diabetes. The link was stronger in women than in men. Vitamin D and Calcium May Lower the Risk for Type 2 Diabetes in Women
A lack of vitamin D and calcium may be linked to getting type 2 diabetes. More than 80,000 women who took part in the Nurses' Health Study. Over the course of 20 years, over 4,800 women developed type 2 diabetes. The researchers found that a combined intake of over 1,200 milligrams of calcium and over 800 units of vitamin D was linked with a 33% lower risk for type 2 diabetes (as compared to women who took much smaller amounts of calcium and vitamin D). The results show that consuming higher amounts of vitamin D and calcium help lower the risk for type 2 diabetes in women.

Caffeine, like chocolate, often receives bad publicity. Whilst in some instances, and in excess, these can have negative effects on our body, they can also be quite beneficial.

For example, excess caffeine can create anxiety, nausea (particularly if taken on an empty stomach), an increase in heart rate, and even depression in some people. If struggling with sugar addiction, or wanting to lose weight, there are more nutritionally complete foods that are available.

But scientists have turned up some interesting facts on caffeine. For example, caffeine actually blocks the effects of a neurotransmitter in the brain (adenosine) that otherwise makes us feel tired. This is why it works so well to keep us awake. It also encourages the release of another brain chemical, dopamine (as well as adrenaline). Dopamine contributes to a feeling of well being.

Two studies, one a population based study (which are not as specific or rigorously defined as other types of studies, but nonetheless valuable indicators) found that drinking caffeine containing drinks like coffee and tea had a protective effect for those at risk of developing liver disease. Issues that the study participants had that increased their risk of liver disease included alcoholism, hepatitis B or C, obesity, or other complications.

And the results indicated that people who drank more than 2 cups of coffee a day had a 44% lower chance of showing actual liver damage compared to those who drank no caffeine. This was not a clinical trial, and the reason why coffee and tea had such an effect is not known. Coffee and tea contain a range of plant chemicals (phytonutrients) that could be responsible for this. A 2005 Norwegian study also found similar benefits for coffee with regards liver disease. This study found that drinking 3 cups of coffee a day could lower the risk of death from liver cirrhosis.

Even if you're not at risk of liver disease, caffeine still has some advantages. Recent research from Austria showed that caffeine may actually enhance short term memory. Researchers found that there was an increase in brain activity (as measured by functional magnetic resonance imaging) in the parts of the brain that were associated with memory and attention. These parts of the brain were the frontal lobe and the anterior cingulum. This was a placebo controlled study, meaning that some people were not given any caffeine. Another, earlier study (2004) found that caffeine did support short term memory, but only when it was in relation to a topic that people were already thinking about. This study found that when testing coffee's effects on unrelated subjects, short term recall was actually inhibited.

Everything does have a flip side though. Adenosine, which is blocked by coffee, is also calming. This could be why it can also cause anxiety in excess, and in some individuals. After all, the balance of our brain chemistry is unique. And when we are addicted to stimulants like caffeine, we lose the sensitivity to our own natural stimulants (dopamine and adrenaline).

While coffee may be one of the most popular drinks around, millions are forced to do without it because of heartburn, acid reflux, chronic stomach discomfort and other gastrointestinal issues. Brewing a great cup of coffee depends on a number of things such as the quality of the coffee bean, the quality of the water being used, the type of brewing being done, and the grind of the coffee. However the relationship between the grind of the coffee and the type of brewing being done is more detailed and could use a little explanation. Now we all know that we make coffee by passing hot water over crushed coffee beans. However for it to really work well we need to understand just how long the water should be passing over the beans. The purpose of this article is to help you understand how to match your coffee's grind to the type of brewing you are doing in order to make the best coffee possible.

Generally speaking, the 'soaking' time relates directly to how coarse the coffee is ground. This means that smaller coffee grinds need less contact with the water, and coarser grinds need longer contact. Espresso coffee is only exposed to water for 20-40 seconds and as a result is made using extremely fine grind coffee. A French press coffee maker can take as much as 4 minutes and uses an extremely coarse grind. If coffee is left contacting water for too long for its grind size, unwanted extracts emerge and make the coffee taste bitter. Of course if the grind is too large and the water passes very quickly (like using frech press grind in an espresso maker), very little of the caffeine and flavours extracted and will have poor flavour.

Of course filters play an important role in managing the balance between over and under brewing your coffee. Not only do they keep the grind out of your cup, but they also control how fast the water passes over the grinds. Paper filters are the most common, but many people are also using metal varieties. Paper filters are quite good. However they can absorb some of the coffee flavour, and some people claim they can taste the paper in the final coffee. Metal filters are normally made from stainless steel or gold plated mesh. They have very fine weave and filter out the coffee grinds very well. They also do not alter the taste of the coffee at all. Metal filters are also more environmentally friendly than the paper alternative.

Whichever you choose, be sure to buy decent quality. Cheap filters often clog or not allow the coffee to brew properly. A decent quality metal filter will last years and save money in the end.

It’s the recipe and of course the prettiness factor. We have all tried to make these coffee delights at home the way we think they are made, but do we really know the real way they are supposed to be made to extract the enchanting flavors correctly? Cappuccino: Equal parts of steamed and frothed milk and espresso. The milk goes on top of the espresso. Dust with nutmeg, cinnamon or chocolate powder or shavings.

Caf้ Mochas: The easiest way is to use a good brand of hot chocolate, throw in a shot of espresso and top with whipping cream and chocolate powder or shavings. It looks the best if you put it in a tall glass and use a long handled spoon. For a finishing touch add a saucer and a napkin. Or make a latte and toss in a chocolate flavored shot.

Lattes: Foam & steam milk to 140-degrees. The ratio is 50% espresso and 50% milk. Pour the milk down the side of the cup so it infuses with the espresso. The difference between this and a cappuccino is a latte blends the two things together, whereas the cappuccino keeps them separate.

Espressos: We’ve all had bad espresso. There are many reasons why this is. The number one reason is an unfavorable bean. If you like espresso you are likely a connoisseur of coffee and know what constitutes a good bean. Anyway, to make a good espresso you must do the following:
  • Use a fine grind
  • You must tamp the espresso down firmly
  • You must use a high pressure machine or stove top model
  • You must not try to make too much at once
  • You must see the creama on the top, which is a golden-brown foam
  • You must use an appropriate espresso cup to keep the temperature from dissipating too quickly

All in all, making coffee correctly is all up to you and the way your flavor buds react to the taste. If you like it a particular way, then make it that particular way. A Brief Overview of Gourmet Coffee

In numbers, between the men who take coffee, 67% of the spermatozoa had mobility enough to arrive at the ovule, against 54% that did not take it. Now, the doctor will test men with fertility problems. "Depending on the results, we can suggest to the patient with little movement of the spermatozoa to take a cup of coffee”.

Okay, I've Made My Espresso, Now What Do I Do With the Milk?

I did all of the right things to make espresso at home. I bought myself a good espresso machine. I learned which espresso beans have the best taste and how to grind them to the correct fineness. I managed to insert the gadget with the grinds, known as a portafilter, into the espresso machine, lock it into place, turn on the machine and let her rip. Great espresso!

But I wanted a cappuccino. Sue wanted a latte. Time to figure out how to steam the milk.

Sue is always dieting, so she wants nonfat milk. I found out that low fat and nonfat milk foam really easily. Whole milk takes more practice. Same thing with half and half if you want a breve.

Some espresso machines have a built in steam nozzle and some don't. You may need to buy a separate steamer. I recommend getting an espresso machine with one built in. Saves space.

The first thing to do is to put that stainless steel pitcher and milk into the refrigerator to get cold. Always start with them cold. And then my next learning curve came with remembering to fill the pitcher about a third to a half full. Milk expands really well when it's steamed. It takes only once for it to foam up, overflow and hit the floor to remember to start with a pitcher no more than half full.

Start by putting the nozzle on the surface of the milk and turning the steam on full. The milk is going to begin to foam, so keep lowering the pitcher so that the nozzle is just under the surface of the milk. About a half inch will do fine. You can turn down the pressure when the foam really begins to rise, or just take the pitcher away. Now the milk is just about at the boiling point.

Now here is something important. Don't let it boil. This is another way to get the milk to overflow the pitcher. Or even worse, it will taste burnt. Ugh. Nasty.

Your steamed milk should have little bubbles all the way through it, and there should be a light foam on the top. There you are. That's it. Now you go make whatever espresso drink you want. Next up, you can start learning how to make all those fancy designs in the top.

The Hamilton Beach Brew Station 12 Cup Coffee Maker is unique amongst coffee makers. This coffee maker has no carafe, instead the coffee is self contained within the unit and is released into your cup by pressing on a dispenser. A great idea it is, but Hamilton Beach needs to engineer this product as it failed ten days after we purchased one. Please continue reading for all the details.

Our Braun coffee maker served us well for over six years. Thousands of coffee potfuls later, it failed to work one morning and we knew it was time to shop for a new one. As we strolled the aisles of our local BJ's we realized that Braun was not a brand that they carried. Nevertheless our attention was drawn to a unique looking product, the Hamilton Beach Brew Station 12 Cup Coffee Maker, and we soon carried it off and brought it home.

What is so special about this particular product? No carafe! Yes, coffee brews within the main unit and then is released into your cup by pressing on a dispenser, much like the type you find at some coffee stores. The advantage is obvious: you can get coffee with one hand while not worrying that you will break the carafe. An excellent idea!

This particular model holds standard sized coffee filters and has an internal warming tray to keep the coffee warm. Indeed, we felt that the unit kept coffee hotter longer than most units we had owned in the past. For several days we enjoyed hot, fresh brewed coffee and we believed that we made a wise decision in purchasing the product.

Our interest in the product was short-lived, however. One of the oddest features about the unit was the double push of the on/brew button to get the unit started. Much like the double click of your computer's mouse to open a file, users must do the same thing to the round push button located on the front of the machine. No toggling on/off switch to deal with here! Unfortunately, one recent morning the switch did not work. Sure, the light came on, but coffee was not dispensed. My wife and I redid the process at least a dozen times before we realized that the machine was not going to work. The water was in the unit, the coffee was seated properly in the filter, and the light switch came on. Still, no coffee was brewing.

In summation, the Hamilton Beach Brew Station 12 Cup Coffee Maker is an excellent idea, but the button is a bad idea. It would be better to replace the switch with something that works the first time and everytime thereafter. Fortunately for us we were able to return the item to BJ's where we received a full cash refund. Hamilton Beach has a great idea, but their engineering leaves something to be desired.

About 850 A.D it is said that a lone shepherd and his flock came across a strange and mysterious plant growing upon a secluded and forgotten hillside. Here it was to be held for many years as a sacred substance but was eventually to be unlawfully exported by a merchant called Baba Budan. Word of its qualities were soon to spread and within a few years coffee was to emerge as one of the most valued commodities of all time. Now would you believe that each year we drink an amazing four billion cups and there are those among us who would cry at the thought of starting their day without it.

Although coffee is mainly known as a sleep suppressant there are those who consider coffee to have many health benefits. It is thought that people who suffer from asthma and partake of the beverage have at least 25% less symptoms which may be due to a substance in coffee called theophylline. This is known as a bronchodilator and quite simply it is thought to help those who suffer with the disease to breath with a little more ease. Coffee Health - New Antioxidant On The Block

Green coffee beans have supplied a new player in the antioxidant arena. An extract of green coffee beans has been found to have a stronger antioxidant effect than established antioxidants like green tea and grape seed extract.

The active constituent in coffee that is responsible for its many health benefits is a compound called chlorogenic acid. It neutralizes free radicals, and addresses the problem of hydroxyl radicals, both of which can lead to cellular degeneration if left unchecked. Chlorogenic acid also helps regulate metabolism. Compared to green tea and grape seed extract, green coffee bean extract is twice as effective in absorbing oxygen free radicals.

One of the advantages of using the green coffee bean extract is that the negative effects of coffee are avoided. The chlorogenic acid is thought to boost metabolism by changing the way glucose is taken up by the body. And it does contain caffeic acids, which give a boost to energy levels like regular coffee does. But unlike boiled coffee, green coffee bean extract contains no cafestol, which is a diterpene. Along with its diterpene relative kahweol, cafestol increases concentrations of the 'bad' cholesterol, LDL, to levels that over a lifetime might increase the risk of coronary heart disease by as much as 20% These diterpenes also had an effect on the levels of liver enzymes measured. When these are elevated it is an indicator of stress on the liver. However the study that measured this found this was a transient effect, and also that the levels of liver enzymes were much lower than those with liver disease.

As a side note on the health effect of the diterpenes found in regular coffee, it was found that by simply drinking filter coffee, none of these effects on cholesterol levels or the liver took place. The coffee filter removed the offending diterpenes. And levels of these diterpenes in instant coffee are low.

Other benefits of green coffee bean extract include an increase in the effectiveness of pain killers, especially for migraine medications; a reduction in the risk of diabetes; and assisting the body burn a higher proportion of lipids (fats) compared to carbohydrates, which could help with muscle fatigue for athletes and bodybuilders.

Interestingly, on the subject of caffeine and liver disease, further studies have indicated it may in fact support liver health for some people. Those who were at high risk of developing liver disease due to drinking too much alcohol were found less likely to suffer liver damage if they drank more than two cups of coffee or tea a day. This was a population based study, not a clinical trial, and so is not conclusive on the subject. But it does offer some promising information. Those drinking in excess of two cups or more a day were half as likely to develop liver disease compared to those drinking less than one cup a day. Researchers do not know what caused this protective effect.

One of the criticisms of coffee in regards to health is that it leaches calcium from the bones. But this effect has been found to be overemphasized, at least in children. And adults who consume a diet with sufficient levels of calcium will be protected from the small amount of calcium that is lost due to coffee consumption.

So the old axiom that caffeine can stunt a child's growth is a myth. It was based on the fact that in older studies, caffeine was associated with low bone mass because those studies were done on elderly people who both drank a lot of coffee and had diets that were low in calcium. Recent studies in the US followed 80 teenagers over 6 years, and found no difference in the bone density of those with a high level of caffeine in their diet, compared to those teenagers who had little caffeine. Other studies determined that the amount of calcium lost from bones is small and can be balanced by having sufficient calcium in your diet.

Coffee: Is It Getting Too Complicated?

Plain coffee is fast becoming a thing of the past. It's now quite simple to whip up a gourmet hot beverage for guest, family, or just for yourself. Nowadays there are a number of coffee clubs and circles in which coffee drinking has become somewhat of a social club. These social clubs meet in the community or on the Internet.

Where did the good old days go where you could get just a regular, good cup of coffee all across America.

A pound of tea will make about 160 cups whereas a pound of coffee will usually make about 40 cups. This means that a cup of tea has about 1/4th the caffeine of a cup of coffee.

The content of caffeine in coffee decreases as it is grown at higher altitudes. If you want less caffeine in your coffee, grow it higher. Gourmet coffees are typically grown at higher altitudes so they have less caffeine than their grocery store counterparts.

Barista Competitions

A barista is a person who prepares coffee drinks in a coffee house as his or her profession and especially strives to create the perfect espresso. The barista possesses extensive knowledge on different kinds of beans and roasts and has the technical skills required to master the espresso machine.

Baristas consider the extraction of coffee as art and they actually perform in front of their customers each time they prepare an espresso, a cappuccino, a caffe latte or a caffe mocha. However, if they wish for larger audience and consider themselves as really talented they can consider competing in barista competitions. These events take place every year and they are held at local and national levels. The ultimate title to win is the World Barista Champion.

The World Barista Championship was first held in 2000 in Monte Carlo and it became quickly a public event where the best baristas from different countries battled for espresso making supremacy. The World Barista Championship takes place every year in a different country and the competitors are the winners of the national barista competitions.

In the United States the Specialty Coffee Association of America (SCAA) hosts several local barista competitions. There are ten regions, and each state has been assigned to a region. Local competitions are sponsored by businesses, and the winner of each of the local events has the chance to try to impress the jury at the US Barista Championship. There are many barista competitions in Europe and the United Kingdom. Canada, Australia and Central America also have barista competitions at the local, regional and national levels.

In a barista competition the judges have to assess both the contenders and the coffee drinks they make. The criteria based on which they score each barista involve the quality and taste of the beverage, personal presentation, technique and also the presentation of the coffee drink.

The baristas race against the clock as they are only allowed to perform for 15 minutes. They also have 15 minutes before the actual presentation to prepare with every detail for the show - ingredients like syrups, chocolate sprinkles or anything that you can think of except alcohol, cups, trays, blenders, mixers and portable burners. Contenders even roast their own coffee and bring it with them at the competition. After serving their drinks, baristas have 15 minutes to clean their station before they make room for another contestant. The espresso machines used in the competition are key to the taste of the coffee. The machines must be left absolutely clean and free from any impurities.

During the 15 minute performance interval baristas have to prove their skills by preparing 4 espressos, 4 cappuccinos and 4 signature drinks. Four sensory judges that have to decide on the quality of the drinks sample each one of the beverages. While preparing the beverages, the baristas have to present their work, give details about the ingredients they used to the audience and also treat the judges as customers in a coffee shop. One can only imagine the stress.

After the espressos and cappuccinos, which are finished with latte art - complicate designs drawn atop the cup with foamed milk by using the pitcher, the time comes for the signature drink. It is the competitor's original creation and this is where baristas reveal their creativity and skills combining roasts, syrups, steaming and frothing milk and using all sorts of ingredients and flavours that turn their beverages into savory works of art. The baristas can spend even months to invent this perfect drink that can bring them the victory in a competition.

Here are some examples of drinks that barista champions have invented:

  • Troels Poulsen, the 2005 World Barista Championship winner, created a drink called ESB, as in "enhanced sensory balance" by combining melted pepper-gel, espresso and lavender syrup.
  • Phuong Tran, the 2005 USA Barista Champion, was inspired by her childhood in creating the Crimson Sage, a drink made of sugar cane juice, white pepper powder and steamed milk infused with sage leaves. She said that as a child she loved drinking sugar cane juice with ice and she always dreamed of using it in a drink.
  • Sammy Piccolo, the 2004 Canadian Barista Championship winner, created "Insieme" by using raw sugar, egg yolks, curry, bittersweet chocolate and milk.
  • Bronwen Serna, USA Barista Champion of 2004, entitled her signature drink "Sweetness" because the main "secret" ingredient was honey. She also used dark chocolate powder and served it with a dark chocolate square.

Baristas train hard for these competitions, especially if they have the chance to participate in the World Barista Championship. They try to bring to perfection their technique and put together their program as during the competition everything has to work smoothly, no glitches are allowed. They can actually be compared to athletes rehearsing for the Olympic games as some of them even have coaches that sometimes play the role of judges in preparation for the competition.

Barista training

Well, perhaps after reading about the competition requirements it might be wise to brush up a bit on your skills. There are several ways to either get basic skills training as a barista or enhance your existing skills:

  • Books and manuals. There are many books or manuals available that take you step by step through the processes of making an espresso, a cappuccino and other specialty coffee drink. The drawback is that you only have still pictures to look at which may make it difficult for beginners to see the details of the methods.
  • Videos. These provide both visual modeling as well as commentary on how to produce the perfect cup of espresso.
  • Training classes. There are training locations in most areas that offer courses that range from three hours to a full day on learning the secrets of a barista. Many of these programs also deal with how to care for the espresso machine and offer a certificate upon completion.
  • Hands-on. Some experienced barista will offer personal training or mentoring for those interested in becoming a barista or in improving their skills.

Whatever you decide to do, if you have a talent for making a great cup of espresso you should consider entering a barista competition. You will meet other people that share your passion for coffee and will certainly get some new ideas to try in your coffee shop.

A Brief History of Espresso

Luigi Bezzera, the owner of a manufacturing business invented Espresso at the turn of the century.  Luigi Bezzera was simply trying to figure out a way to brew coffee faster.  He figured if he could just add pressure to the brewing process it would speed things up.  Thus the "Fast Coffee Machine" was created.  His idea of a fast cup of coffee turned out much better than he had planned, what he ended up with is a better, fuller tasting cup of strong coffee, as well as a much faster process.  He found that the quicker more efficient brewing method allowed for the quality of the beans to be extracted as opposed to over extracting he had previously experienced.  The term "Espresso" means fast in italian, hence the term.

It wasn't until later when Desidero Pavoni purchased the rights from Mr. Bezzera for the espresso machine that it became popular.  Pavoni was extremely successful in marketing the product and probably changed the way people drink coffee from then on.  Just look around!  Coffee and Espresso shops are popping up everywhere, even in the U.S. it has become not only popular for the delicious beans, but has given us a new place to socialize.

Espresso Timeline:

In 1901 Luigi Bezzera filed a patent for the espresso machine that contained a boiler and four "groups". Each group could take different size filters that contained the coffee.  Boiling water was forced through the coffee and into a cup.  Ambrogio Fumagelli says that this was the birth of (fast) espresso coffee.

In 1903 Luigi Bezzera's patent was then purchased by Desiderio Pavoni and put to market in a big way.

In 1905 The Pavoni company begins manufacturing the espresso machines soley based on Bezzera's patent.

In 1927 First espresso machine was installed in the United States.  It was a La Pavoni Espresso Machine installed at Regio's

in New York.

In 1938 Cremonesi designed a piston pump that forced hot water through the coffee.  It was installed at Achille Gaggia's

coffee bar.

In 1946 Gaggia begins manufacturing the commercial piston machine.  Resulting foam or cream layered coffee or cafe'.
